No prep is required, so it’s faster than delivery!When I cannot be bothered to cook elaborate meals (which is most week-nights!), meals like this simple stir-fry have always been my go-to.

1. Add shallots, garlic, and chili to a food processor or mortar and make a paste.

PREP THE SAMBAL

2. Heat wok and add oil. Wait till the oil gets almost smoky. Beat one egg, and add to the hot wok. Swirl the egg around, and scramble it with a spatula. Remove from wok and keep aside.

COOK THE EGG

3. Add oil to the wok and heat till it's smoky. Once hot, add the sambal paste and fry for 2 minutes till well cooked, and the ingredients do not look raw anymore. The oil should separate from the paste.
