Instructions
Make Stir Fry Sauce
In a small bowl, mix together oyster sauce, soy sauce, Chinese cooking wine, and sesame oil. water, and corn flour. Stir well.
Make a cornflower slurry by mixing cornflour with water.
Prepare Beef
Slice beef into thin slices (about 1/8 inch). Cut against the grain. See sketch.
Add 2 Tablespoons of stir-fry sauce, and 1 teaspoon of cornflour slurry to the sliced beef, and let it marinate for 10-15 minutes. See note #2
Stir Fry
Heat a large wok or skillet over high heat and add 1 tablespoon of oil.
Add sliced beef to the wok and stir-fry for 2-3 minutes, or until browned. Remove beef from the wok and set aside.
In the same wok, add the remaining 1 tablespoon of oil and the minced garlic. Stir-fry for 30 seconds.
Pour the stir-fry sauce and cornflour slurry and simmer till thickened.
Add the beef back into the wok and stir to combine.
Add broccoli and stir-fry for 2-3 minutes.
Serve the beef and broccoli stir-fry with steamed rice or cauliflower rice.
Notes
Note 1: Salt: This recipe has salt in the form of soy sauce, blanched broccoli, and stock. Only add salt if required as per taste. Note 2: Steak: Pick a steak with some marbling. See main posts for details and suggestions. The steps for tenderizing and velveting are for tougher cuts of beef like Chuck steak. The best cuts for stir-frying are sirloin, rump, flank, sirloin, t-bone, and scotch fillet.Note 3: Since this is a very quick stir fry, it is easier to blanch broccoli beforehand. Just add broccoli to salted boiling water. When the water boils back again, simmer for 2-3 minutes, drain, and keep in chilled water to prevent further cooking.ORBoil for just 1 minute, and keep aside. No chilled water bath is required.
