Instructions
Start by letting the chicken breasts come to room temperature.
Slice the breast horizontally to make them thinner.
Pound them with a mallet or a rolling pin to tenderize and ensure even cooking.
Season the chicken breasts generously with salt, black pepper, and other seasoning.
Place your cast iron skillet on the stovetop over medium-high heat. Allow the skillet to heat up for a few minutes until it's hot. (note #3)
Add olive oil and butter to the skillet. Once the butter melts, swirl the pan around to coat the bottom evenly.
Carefully place the seasoned chicken breasts in the hot skillet. You should hear a sizzling sound as the chicken makes contact with the hot surface.
Let the chicken cook undisturbed for about 5-7 minutes on the first side. This allows a nice sear to develop.
Once the chicken develops a golden-brown crust on the first side, use tongs to gently flip the chicken breasts.
Continue cooking the chicken on the second side for another 5-7 minutes or until the internal temperature reaches 165°F (74°C) and the juices run clear. (note #4)
Once the chicken is cooked through, remove it from the skillet and place it on a clean plate or cutting board. Allow the chicken breasts to rest for a few minutes. This allows the juices to redistribute within the meat, ensuring a juicy result.
Serve whole or slice the rested chicken breasts and serve them with your favorite side dishes.
Notes
Note #1: Chicken breasts range from 4 oz to 10 oz. Adjust quantity as required. 1 pound of raw chicken breasts will serve 2-3 people. Note #2: You can use any homemade seasoning you prefer. Mix paprika powder, garlic powder, salt, and pepper with herbs like thyme, rosemary, etc. At the bare minimum, use salt, and pepper. Note #3: You can test the heat by sprinkling a few drops of water onto the skillet – they should sizzle and evaporate quickly.Note #4: You can use an instant-read thermometer to check the temperature.
