Teriyaki Sauce: Mix soy sauce, mirin, and sake, and stir to mix.
Add ginger, garlic, and sugar to this teriyaki sauce.
In a plastic ziplock bag or a bowl, place the salmon fillets.
Add half of the marinade to the Ziploc bag.
Toss well, so that the salmon is completely covered with marinade.
Keep aside for 10-20 minutes
Air Fry The Salmon
Place marinated salmon fillets in the air fryer basket. Keep some space between them
Air fry salmon at 360 F (180 C) for about 8 minutes.
To make Teriyaki Glaze
In the remaining half of the marinade, add water, sugar and cornstarch and mix well.
In a deep pan, add the teriyaki + cornstarch slurry and heat gently.
Keep stirring till the slurry becomes glossy and transparent.
To Serve
Place the cooked salmon in a bowl, and add the glaze on top.
Garnish with sesame seeds and green spring onions (optional)

Note 1: Nutrition details are based on sugar. For a lower carb version, please substitute sugar with Erythritol.Note 2 - Although sugar is part of the teriyaki marinade, it is added to the cornstarch glaze later to prevent burning in the air fryer. Sugar tends to char before the fish is cooked. Adding sugar later ensures a delicate tender fish finished with a strong glaze.
