Ingredients
2cupsBlueberriesfresh or frozen
1/4cupErythritol
2TablespoonsLemon Juice
1TablespoonChia SeedsSee notes
Instructions
Add blueberries, sweetener, and lemon juice to a small saucepan.
Simmer over medium heat for 8–10 minutes, stirring and mashing the berries.
Stir in chia seeds and cook for 2–3 minutes more.
Remove from heat and let cool. It will continue to thicken.
Store in a sealed jar in the fridge for up to 2 weeks.

Notes:Chia Seeds: Chia seeds help thicken and set the jam. But if you do not want to use them, just cook the jam until it is thicker to your liking. It might take 10 more minutes.
