In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Prepare the Sauce:
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Cook the Sausages:
Add the sliced sausages to the skillet. Cook until they are browned on all sides and cooked through, about 5-7 minutes.
Add Tomatoes and Seasoning:
Stir in the canned diced tomatoes and their juice.
Add the dried oregano, salt, and pepper to taste.
Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together. If the sauce thickens too much, add some of the reserved pasta water to reach the desired consistency.
Combine Pasta and Sauce:
Add the cooked pasta to the skillet and toss to combine with the sauce. Ensure the pasta is well-coated. If the mixture seems dry, add a bit more of the reserved pasta water.
Serve:
Serve the sausage pasta hot, topped with freshly grated Parmesan cheese if desired. Enjoy!

Note 1: I have used beef sausages. Note 2: Use any short pasta like penne, fusilli, farfalle, or elbow macaroni.
