Peri Peri Chicken Breast
Ingredients
- 1 Tablespoon Oil
- 4 Chicken Breasts
Marinade
- 1 Onion
- 2 Tablespoons tomato paste
- 1 Tablespoon garlic
- 1 Tablespoon lemon juice plus rind
- 1 tsp vinegar
- 1 tsp oil
- 1 tsp brown sugar
- 1 tsp salt
- 1 tsp paprika
- 5 chili birds eye
Instructions
- In a grinder or food processor, add all the marinade ingredients and make a smooth paste.
- Marinate the chicken breasts in the marinade and set aside for 10 minutes
- Heat a pan and add a tablespoon of oil.
- Once hot, fry the marinated chicken till well cooked on both sides and the internal temperature is 165 F / 75 C.
- Serve hot.
