Ingredients
  

  • 1 Tablespoon Oil
  • 4 Chicken Breasts

Marinade

  • 1 Onion
  • 2 Tablespoons tomato paste
  • 1 Tablespoon garlic
  • 1 Tablespoon lemon juice plus rind
  • 1 tsp vinegar
  • 1 tsp oil
  • 1 tsp brown sugar
  • 1 tsp salt
  • 1 tsp paprika
  • 5 chili birds eye

Instructions

  • In a grinder or food processor, add all the marinade ingredients and make a smooth paste.
  • Marinate the chicken breasts in the marinade and set aside for 10 minutes
  • Heat a pan and add a tablespoon of oil.
  • Once hot, fry the marinated chicken till well cooked on both sides and the internal temperature is 165 F / 75 C.
  • Serve hot.
