I have always rolled my eyes at suggestions like eating fresh vegetable sticks when I am craving a snack. Umm, no, my cravings do not work that way. Celery and carrot sticks are not my definition of snacks! But when these carrots are seasoned with salt, pepper, honey, and a bit of olive oil goodness, and roasted golden brown, that’s when the magic happens!

Ingredients for Honey Roasted Carrots in Air Fryer
Carrots: I have used the regular orange varieties available everywhere in Australia. You can also add red, purple, etc to the mix. Baby carrots are basically grown carrots, machine cut into smaller two inches pieces and cold in packages. If using a whole carrot, cut them into two-three inches long and half-inch-thick slices (see photos)
Honey: Just regular supermarket honey is fine. If the weather is cold, the honey might get crystalized. Just warm it in the microwave or by immersing the bottle in warm water till it flows easier. This will make it easier to toss carrots to coat.
Oil: I have used olive oil. However, you can substitute with any neutral-smelling cooking oil, ghee, melted butter, or coconut oil.
Seasoning: This recipe keeps it simple by using just salt and pepper.
Herbs: I have used rosemary. You can also use a few of your favorite herbs like basil, oregano, parsley, thyme, etc.

- In a bowl, place carrot slices and add oil. Mix well, so that the carrots are well coated. This will help the seasoning and herbs stick better to carrots rather than fly around in your air fryer.
- Add honey, salt, pepper, and herbs of your choice.
3. With your hands or spoons, toss around the carrots so that they are well seasoned.
4. Spread carrots in the air fryer basket evenly in a single layer. and air fry for 10-12 minutes at 400 F / 200 C. Roast carrots till golden.

If you have whole mature carrots, wash them well and pat dry. Then chop off both ends, and peel the skin carefully with a vegetable peeler. Slice the carrot in half horizontally. Then slice vertically to make about two to three inches long slices, about half an inch thick. Cutting carrots uniformly will ensure that they cook evenly together.
To save time prepping, you can also use ready-prepped bagged baby carrots from the supermarket.
What are baby carrots?
Baby carrots could be young carrots harvested before they mature to full size. Alternatively, they could be whole mature carrots cut and rounded in the ‘baby-cut’ style. Either way, they are delicious and good for this recipe. Young baby carrots could be tender and sweeter than mature carrots.
Can I freeze these honey-roasted carrots?
Cooked carrots can be frozen for about 6 months. On thawing, they might lose their texture, but they would still be delicious and nutritious!

How to make Pan Fried Carrots?
Prepare carrots as above. In a pan, add oil, and heat on medium heat. Once hot, add the carrots and fry them for about 10 minutes. Add salt, pepper, honey, and herbs. Mix well till carrots turn golden, and take off the heat.
How to make oven-roasted carrots with honey?
Oven Roasted Carrot Recipe: Do not have an air fryer? No problem! These honey carrots can be made in the oven as well. Preheat oven to 400F/200C. Slice carrots as above, and add oil, seasoning, honey, and herbs. Like a baking tray with baking paper or mat, and spread carrots in one single layer. Try and keep some gap between carrots so they do not sweat. Bake for about 25 minutes and check for doneness. You should be able to slice it easily with a fork or knife. Flip the carrots and cook for about 5-10 minutes more.

- 1 Mixing Bowl
