Pesto Ground Beef Pasta
Tender pasta in creamy pesto sauce with ground beef

Equipment
- 1 Skillet
- 1 Stirring spoon
- 1 Saucepan to boil pasta
- 1 Colander to drain pasta
Ingredients
- 1 tablespoons olive oil
- 1 medium onion finely chopped
- 3 cloves garlic minced
- 1 pound ground beef
- 1/2 cup sundried tomatoes chopped
- 1/2 cup pesto store-bought or homemade
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach roughly chopped
- 12 ounces pasta your favorite short pasta – 350- 400 g
- Grated Parmesan cheese optional, for serving
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
Prepare the Sauce:
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
Cook the Ground Beef:
- Add the ground beef to the skillet, breaking it up with a spatula.
- Cook until browned and cooked through, about 7-10 minutes.
- Drain any excess fat if necessary.
Add Sundried Tomatoes and Seasoning:
- Stir in the chopped sundried tomatoes.
- Season with salt, pepper, and Italian seasoning.
- Cook for an additional 2-3 minutes.
Combine with Pesto and Spinach:
- Reduce the heat to low and add the pesto to the skillet.
- Stir until the ground beef mixture is well coated.
- Add the chopped spinach and cook until wilted, about 2 minutes.
Mix with Pasta:
- Add the cooked pasta to the skillet, tossing to combine.
- If the mixture seems dry, add the reserved pasta water a little at a time until the desired consistency is reached.
Serve:
- Serve the pesto ground beef pasta hot.
- Top with grated Parmesan cheese if desired.
