Equipment

Ingredients
  

  • 2 Tablespoons Olive Oil Minced
  • 2 Tablespoons Garlic
  • 1 Onion Medium Size, Diced
  • 2 Chorizo Chopped in small pieces
  • 1 Can Crushed Tomatoes
  • 4 Cups Vegetable or Chicken Broth
  • 2 Cups Spinach Leaves
  • 1 Cups Pastina
  • 1/2 Cup Parmesan Cheese Grated
  • Salt and Pepper To taste
  • 1 teaspoon Sugar optional

Instructions

Sauté Aromatics

  • Heat olive oil in a large pot over medium heat.
  • Add onion and cook for about 3-4 minutes until soft.
  • Stir in garlic and cook for 30 seconds, until fragrant.

Cook Chorizo

  • Add sliced or crumbled chorizo and cook until browned and slightly crispy, about 4-5 minutes.

Simmer the Soup Base

  • Pour in the crushed tomatoes and broth.
  • Add salt, pepper, and sugar (if using). Stir well.
  • Bring to a gentle simmer and cook for 10 minutes, stirring occasionally.

Cook the Pastina

  • Stir in the pastina and let it cook in the broth for 5-7 minutes, or until tender. Stir occasionally to prevent sticking.

Add Spinach & Parmesan

  • Stir in the spinach leaves and let them wilt (about 2 minutes).
  • Add grated Parmesan and mix well.

Adjust & Serve

  • Taste and adjust seasoning if needed.
  • Serve warm with extra Parmesan on top and a drizzle of olive oil, if desired.
