Ingredients
  

Chicken Marinade

  • 1.5 pound chicken thighs – 700 grams
  • 1 Tablespoon yogurt
  • 1 teaspoon lemon juice
  • 1 Tablespoon ginger garlic paste
  • 1/2 teaspoon Kashmiri chili powder
  • 1 teaspoon salt

Sauce

  • 1 Tablespoon ghee or butter
  • 1/2 teaspoon Kashmiri chilli powder
  • 1 cup tomato passata
  • 1/2 cup heavy cream
  • 1 1/2 tsp garam masala
  • 1 tsp kasuri methi

Instructions

  • Combine chicken with marinade ingredients and rest 10–20 minutes.
  • Heat ghee in a skillet and add chilli powder, and stir for 5 seconds only!
  • Add the marinated chicken and cook until lightly browned.
  • Add passata and simmer uncovered for 8–10 minutes.
  • Adjust salt to taste.
  • Stir in heavy cream and simmer 5 minutes.
  • Sprinkle garam masala and kasuri methi.
  • Serve hot with cauliflower rice, regular rice or naan.

Notes

Note on blooming chili powder:
To get that rich butter chicken color without bitterness, bloom the chili powder briefly in ghee. Keep the heat low and stir for just 5–8 seconds, then immediately add the chicken. Chili powder burns very quickly, so this step should be quick and controlled — you’re extracting color and aroma, not frying it.
Note on sweetness:
Restaurant-style butter chicken has a very subtle sweetness that balances the acidity of the tomatoes and rounds out the flavors. If the sauce tastes slightly sharp, add a pinch of sweetener.  Start with half a teaspoon and adjust as per taste.

Butter Chicken Sauce

3 tbsp ghee or butter
1 cup tomato passata (240 ml)
¾ cup heavy cream (180 ml)
1½ tsp garam masala
1 tsp kasuri methi (dried fenugreek leaves), crushed
Salt to taste

Chili Oil Finish (For Color)

1 tbsp ghee
1 tsp Kashmiri chili powder

How to Make Keto Butter Chicken (step by step)

Marinate the Chicken

In a bowl, combine chicken, yogurt, lemon juice, ginger-garlic paste, chili powder, and salt.

Mix well and let marinate for 10–20 minutes while preparing the sauce.

Cook the Chicken

Heat 2 tablespoons of ghee in a large skillet over medium heat.

Add the marinated chicken in a single layer.

Cook for 5–6 minutes, stirring occasionally, until lightly browned.

Add the Tomato Base

Pour in the passata and stir well.

Simmer uncovered for 8–10 minutes until the sauce thickens and the raw tomato flavor cooks off.

Cook the tomato sauce properly.

This is the single most important step in any keto butter chicken recipe. The passata needs a full 8–10 minutes of uncovered simmering to cook off the raw tomato flavor and develop that deep, rich color. Rushing this step is the difference between a flat-tasting sauce and one that tastes as if it came from a restaurant kitchen. Don’t skip it.

Bloom the chili powder low and slow.

Kashmiri chili powder gives keto butter chicken its signature deep red color without excessive heat. The key is to bloom it in ghee off or just barely on the heat — 5 to 8 seconds maximum. It burns in seconds, and burnt chili powder will make the entire sauce bitter. If you’re nervous, take the pan completely off the heat before adding it.

Add garam masala and kasuri methi only at the end.

Both of these spices are aromatic finishers, not cooking spices. Adding them early kills their fragrance.
