The thing I love the most, apart from bold flavors and the smokey fragrance of a sizzling wok, is how most of these dishes are chock-a-block full of colorful, crispy vegetables.

It is nice, however, to be able to replicate the textures and flavors, minus some additives, and with your choice of oils. This recipe gets even easier if you have the easy homemade All-Purpose Chinese Stir-Fry Sauce on hand. This recipe is fast and easy, and so much cheaper and healthier than take-away.

Oil: Pick a neutral-smelling variety like peanut oil, canola oil, vegetable oil, grapeseed oil, etc.

Corn Flour & Water: Corn flour helps with thickening the sauce, and giving the beef a nice and glossy glaze. Add water to corn flour to help break the lumps and make a smooth slurry.

Red Chillies: Use dried or fresh red chilies for a slight heat. You can also omit this completely to keep the dish completely mild.

Make Stir Fry Sauce

  • In a small bowl, mix together oyster sauce, soy sauce, Chinese cooking wine, sesame oil. Prepare corn flour slurry by mixing water and corn flour. Stir well.

  • Heat a large wok or skillet over high heat and add 1 tablespoon of oil.
  • Add sliced beef to the wok and stir-fry for 2-3 minutes, or until browned. Remove beef from the wok and set aside.
  • In the same wok, add the remaining 1 tablespoon of oil and the minced garlic. Stir-fry for 30 seconds.
  • When the ginger and garlic are fried, add the stir fry sauce, and the corn flour slurry.
  • SImmer till the sauce thickens.
  • Add the beef and broccoli into the wok and stir to combine.
  • Serve the beef and broccoli stir-fry with steamed rice or cauliflower rice.

Variations Of Chinese Beef And Broccoli Stir Fry

You can substiture beef with lamb or chicken for an equally delicious stir-fry. For an vegan option, substitute beef with tofu or soy nuggets.

If you like more vegetables, add sliced carrots, snow peas, bok choy, zucchini, red onions, and other stir-fry vegetables to the mix.

Some Useful Tips

Wok Heating: Wait till the wok is well heated and the oil is almost smoking. To test the temperature, touch the oil with tip of a chopstick or wooden spoon. If the wood sizzles, your oil is hot enough for stir-frying.

Tenderizing Beef: Marinate tough cuts of beef with 1/8th teaspoon of baking soda and two tablespoons of water. AFter 25-30 minutes, rinse well and use.

Blanch Broccoli: Since stir-fry is quick cooking menthod, it is preferable to blanch broccoli in boiling water for a minute before adding to the wok. To blanch broccoli ahead of time, see this simple method.

What kind of beef cut is suitable for stir frying?

When selecting beef for stir-frying, look for cuts that are well-marbled, as this will help keep the meat moist and tender during cooking. Eg: rump, sirloin, flank, rib eye, and skirt. Remember, fat equals flavor and tenderness.

Tougher cuts or those with less fat, are less suitable for stir-frying. eg Shanks, rounds, shoulders, brisket, and chuck are unsuitable for stir-frying.

  • 1 Pound Beef Steak (1 pound = 400 g) See notes
  • 2 Cups Broccoli Florets Washed and blanched- See Note 3

Stir Fry Sauce

  • 4 Tablespoons Oyster Sauce
  • 4 Tablespoons Water
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Chinese Cooking Wine Optional
  • 1 teaspoon Sesame Oil

For The Stir Fry

  • 2 Tablespoons Cooking Oil
  • 2 Tablespoons Ginger Minced
  • 2 Tablespoons Garlic Minced
  • 2 Whole Dried Red Chillies As per taste
  • 1 cup Stock Chicken or Beef
  • 1/2 teaspoon White Pepper Powder
  • Salt to taste – see note 1

Instructions

Notes

Note 1: Salt: This recipe has salt in the form of soy sauce, blanched broccoli, and stock. Only add salt if required as per taste. 
Note 2: Steak: Pick a steak with some marbling. See main posts for details and suggestions. The steps for tenderizing and velveting are for tougher cuts of beef like Chuck steak. The best cuts for stir-frying are sirloin, rump, flank, sirloin, t-bone, and scotch fillet.
Note 3: Since this is a very quick stir fry, it is easier to blanch broccoli beforehand. Just add broccoli to salted boiling water. When the water boils back again, simmer for 2-3 minutes, drain, and keep in chilled water to prevent further cooking.

Boil for just 1 minute, and keep aside. No chilled water bath is required.
